You may have to play around with the cathode bias level to put the operating idle point in a good spot. Similarly you could try a 12DW7, with the low mu triode driving the intertage - the higher turns ratio may counteract the low mu, and the lower ra of the low mu triode may provide a softer overdrive where the output stage grids start to conduct noticeably. Adding primary side resistance (15k) and/or adding secondary side resistance, can tailor that high frequency response, and so may be worth playing around with (adding secondary loading will reflect back to the primary, and so 15k could be increased). The output stage grids present no loading on the interstage secondaries up until grid conduction starts to be noticeable (perhaps a volt or two below 0V grid drive).

The high frequency response of the driver stage would be worth measuring, if only to avoid an excessive corner frequency peak or roll-off. In effect, you won't need to driver the driver stage as heavily.
